Apple Waffle Batter

MAKES 8-10 WAFFLES

Dry Ingredients

Wet Ingredients

  • 1½ cups unsweetened applesauce

  • ⅔ cup pure maple syrup

  • 1 cup Thai Kitchen coconut cream

  • 1¼ cups water

  • 1 teaspoon pure vanilla extract

Directions

  1. In a large bowl, whisk together all dry ingredients until evenly combined.

  2. In a separate bowl, whisk together applesauce, maple syrup, coconut cream, water, and vanilla until smooth.

  3. Pour wet ingredients into dry ingredients and gently stir until just combined. Do not overmix.

  4. Preheat waffle iron and lightly grease only if needed.

  5. Scoop batter into the hot waffle iron and cook until golden brown and lightly crisp on the edges, about 4-4.5 minutes.

  6. Repeat with remaining batter.
